The sweet potato is a good source of dietary fiber, which lowers the risk for constipation, diverticulosis, colon and rectal cancer, heart disease, diabetes and obesity. Ingredients:
2 1/2 cups whole grain of soy flour
1 1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 cup butter or low fat margarine
1/2 cup Fructevia, or Steviva Brand Stevia Blend
1 tablespoon grated lemon peel
1 teaspoon nutmeg
1 egg
1 cup grated, raw sweet potatoes
Directions:
Sift flour, baking powder, baking soda, & salt into medium bowl. Set aside.
Cream butter or margarine with the Fructevia, or Steviva Brand Stevia Blend in a large mixing bowl.
Mix in lemon peel, nutmeg, honey, & egg. Then stir in the grated sweet potatoes.
Blend the flour mixture into the sweet potato mixture.
Place rounded teaspoons of the cookie dough onto an un greased cookie sheet (1/2 inch apart).
Bake in a preheated 350° oven for 7 minutes. Remove cookies from sheet and put on a cooling rack.
