Sugar Free Low Carb Piccalilli (Pickles) Recipe Using Stevia

Sugar Free Low Carb Piccalilli (Pickles)

Piccalilli is a tasty mustard pickle, which generally contains cucumbers, cauliflower and onions, but may contain virtually any type of vegetable. The vegetables are cut to small pieces blanched and covered with a mixture of mustard, vinegar, salt, sugar and possibly spices, such as turmeric, which is responsible for the bright yellow color of many piccalillis.

Ingredients:
2 cauliflower's
2 medium sized cucumbers
16 French or Pearl onions, young
1 marrow, medium size
2 pints vinegar
1 oz. whole spice
1/2 cup Fructevia
, Steviva Brand Stevia Blend or a tiny dash (1/16 tsp Steviva Brand Stevia Powder
half an ounce ground or grate fresh ginger
1 oz. mustard
half an ounce turmeric
1 tablespoonful flour

Instructions:
Cut all the vegetables into small pieces, lay on a dish and sprinkle with salt
Leave for 12 hours then drain off water
Boil nearly all the vinegar with the spice, then strain
Mix the other ingredients and Fructevia
, Steviva Brand Stevia Blend or a tiny dash (1/16 tsp Steviva Brand Stevia Powder with the remaining cold vinegar, into a smooth paste; then mix with boiled vinegar
Pour into a saucepan, add vegetables, and boil for 15 minutes
