No Added Sugar Cranberry Confit Recipe Using Stevia

No Added Sugar Holiday Cranberry Confit
Serves: 36

Ingredients
2 Tbsp olive oil
1 red onion, thinly sliced
2 Tbsp cider vinegar
1 tsp molasses
1 tsp Fructevia, Steviva Brand Stevia Blend
or a tiny dash Steviva Brand Stevia Powder
1 Tbsp cranberry juice
1/3 cup fresh or dried cranberries

1 tsp capers
salt & pepper to taste

Instructions
Saute onion in olive oil until caramelized.
Add the rest of the ingredients and continue cooking until the cranberry juice and vinegar have evaporated.
Serve at room temperature in a glass bowl.
