Ingredients:
Crust:
1 c almond flour, (almonds ground in a coffee grinder or food processor)
1/4 c ground flaxseed
1/4 c butter
1/4 c Fructevia, Steviva Brand Stevia Blend or a tiny sprinkle of Steviva Brand Stevia Powder
1 scoop vanilla or chocolate whey
Crust Instructions:
Melt the butter then mix it all up till its crumbly and incorporated and press it down with your hands in a sprayed 8 in pie or springform pan.
Bake at 350 for 10 mins and let it cool to room temp while you make the filling.

2 8oz packs (2 c) cream cheese or neufchatel
1/2 c sour cream
1 tsp vanilla extract
1 scoop vanilla whey
1/2 c Fructevia, Steviva Brand Stevia Blend or a tiny sprinkle of Steviva Brand Stevia Powder
1 c water
1 envelope unflavored gelatin (sugar free)
Instructions:
Filling:
Beat cream cheese, sour cream, vanilla extract, whey, gelatin and Steviva blend at medium speed until well-blended. Blend
Then pour batter into almond flour prepared crust.
Bake at 350 F for 40 minutes, or until center is almost set. Cool.
For best results refrigerate for 3 hours.
Optional: Garnish with fresh berries
